Beyond standard black pepper, Aethon Overseas offers specialty peppercorn varieties for gourmet food markets: green peppercorns (brine-preserved or freeze-dried — fresh flavour), white pepper (fully ripe berries, soaked and dried — milder, white appearance), and long pepper (Piper longum — thin spikes with complex sweetly-spicy character, important in Ayurveda).

Common questions about piperine content, Long Pepper, and processing methods.

Piperine content determines the 'bite' or pungency. For our specialty peppercorns, we maintain a minimum of 4% piperine. We use HPLC (High-Performance Liquid Chromatography) testing to provide precise piperine measurements for every export batch.
Unlike round peppercorns, Long Pepper (Piper longum) consists of small clustered fruit spikes. It has a complex profile — earthy, sweetly spicy, and slightly numbing. It is highly valued in the pharmaceutical industry for its bio-enhancing properties (improving nutrient absorption).
Brine-preserved peppercorns are soft and succulent, ideal for direct use in sauces. Freeze-dried peppercorns are lightweight, maintain their vibrant green color perfectly, and have a brittle texture that makes them excellent for specialty pepper grinders and rubs.
Our white pepper is made from fully ripe peppercorns that are soaked in water to remove the outer dark skin (pericarp). They are then meticulously dried. This process leaves only the inner seed, resulting in a cleaner look for light-colored sauces and a sharper, more fermented flavor profile.
